Easy Japanese pan noodles

Veggies and noodles make a quick weekday meal. Keep it vegetarian or add some grilled chicken or shrimp, a side of artisan bread, and there you go. Dinner in no time at all!

For the veggies I like to use onions, carrots, broccoli, cauliflower, and pea pods. If you like mushrooms, go ahead and slice some up and add them to the mix. Bean or alfalfa sprouts are also a favorite.



For the noodles I like the original flavor Udon noodles. You can find these at most grocery stores. Chicken or shrimp flavor would also work.




I like to saute the onions first in olive oil, then add the carrots until they're softened, then the remaining vegetables. When they are all softened I add the noodles and a tablespoon or two of teriyaki sauce. Enjoy!





Easy Japanese Pan Noodles

Description:

Delicious pan noodles and veggies, with teriyaki sauce.

Ingredients:

  • 2 tablespoons olive oil
  • 1 chopped onion
  • 1 bunch broccoli
  • 1/4 head cauliflower
  • 10 sliced carrots
  • 1 cup pea pods
  • optional: mushrooms, sprouts
  • 1 packet Udon original noodles
  • 2 Tablespoons teriyaki sauce

INSTRUCTIONS:

  1. Chop onions, broccoli, carrots and mushrooms into bitesize pieces.
  2. Saute onions in olive oil until translucent.
  3. Add carrots, and saute until softened.
  4. Add remaining vegetables along with 1/4 cup water. Cover and continute to heat on medium for 5 minutes.
  5. Add noodles and teriyaki sauce. Stir to combine. Turn heat to low and continue cooking another 5-10 minutes, until veggies are soft and noodles are heated.

  6. Serve with artisan bread.
